Tasty Turkey Meatball Kabobs

If you’re looking for a fun family treat or the perfect appetizer, look no further. These meatball kabobs made with ground turkey are a healthy and tasty choice. Kids and partygoers alike will love them!
Makes 6 servings (12 kabobs)

2 egg whites
2 Tbsp. grated Parmesan cheese
2 cloves garlic, minced
20 ounces lean ground turkey (93% fat-free)
½ tsp. salt (optional)
¼ tsp. pepper
8 ounces fresh cremini mushrooms, cut into 12 pieces
24 cherry or grape tomatoes
1 medium onion, quartered, then cut into 12 pieces
¼ cup balsamic vinegar
1 tsp. olive oil
12 bamboo skewers

1. Preheat your oven to 375 F. Prepare a baking sheet by coating with cooking spray.
2. Combine the following: egg whites, ground turkey, garlic, Parmesan cheese, salt and pepper. Mix thoroughly and shape 24 small meatballs. Chill meatballs in the refrigerator for 30 minutes.
3. Place each of the following on a skewer in an alternating fashion: 2 meatballs, 2 tomatoes, 1 onion piece, and 1 mushroom piece.
4. Using a small bowl, whisk olive oil and balsamic vinegar.
5. Arrange kabobs on the prepared baking sheet. Brush with olive oil and balsamic vinegar mixture. Reserve any remaining marinade.
6. Place kabobs in oven and let bake for 10 minutes; then brush again with marinade. Bake another 10-15 minutes or until meatballs are thoroughly cooked.
