Sweet Summer Apple Slaw

Looking for healthier coleslaw that still makes a memorable side dish? Try this crunchy sweet version made with apples. Not only is it low-fat and low carb, it also has fiber to promote good digestion. This recipe calls for Golden Delicious apples, but you can substitute Granny Smith apples for a more tart and tangy taste. This coleslaw is the perfect addition to any summer picnic!
Makes 6 servings

1/3 cup cider vinegar
2 tsp. olive oil
1 tsp. “measures-like-sugar” calorie-free sweetener
1 tsp. Dijon mustard
½ tsp. caraway seeds
¼ tsp. salt
¼ tsp. pepper
7 cups shredded red cabbage
1-½ cups diced Golden Delicious apples (2 medium)

1. In a large bowl, combine vinegar, olive oil, sweetener, mustard, caraway seeds, salt, and pepper. Whisk or stir vigorously until blended.
2. Add red cabbage and diced apples; toss.
3. Cover bowl and put in refrigerator until chilled. Toss before serving.
