White hot cocoa is sweet and creamy, and it's perfect for those cool autumn nights. Add a little pumpkin flavor and some spices, and not only are you getting in an extra serving of vegetables, but you just created a harvest party in a cup. This recipe makes 4 cups of cocoa.
1-1/2 cups of 1% milk
3/4 cup of 100% pure pumpkin puree, canned
1/2 tsp. pumpkin pie spice mix
1/2 tsp. vanilla extract
1/4 cup white chocolate chips
4 tbsp. sugar-free whipped topping
Fresh ground nutmeg
Mix the milk, pumpkin puree, spice mix and vanilla extract in a saucepan. Heat over medium heat and bring the mixture to a simmer. Let it simmer for about 2 minutes.
Add the white chocolate chips to the mixture and stir until the chocolate chips are completely melted. Remove the mixture from the heat.
Pour the mixture out into four small mugs. Add another pinch of cinnamon if desired, as well as a sprinkle of freshly ground nutmeg.
Add a dollop (about 1 tbsp.) of whipped topping on each cup.
