Having diabetes doesn't mean you always have to skip dessert. Just make something that's both healthy and delicious, such as this parfait.
3/4 cup low-fat yogurt (plain or Greek if you prefer)
1 packet of stevia or Splenda sweetener
1/4 cup fresh berries, washed and dried
1/4 cup canned mandarin oranges slices (in natural juices, drained)
1/4 cup granola or grape nuts cereal
Mix the yogurt and sweetener.
Put a dollop of yogurt at the bottom of a parfait cup.
Add 1/2 the mandarin oranges. Sprinkle on a tablespoon of granola or cereal. Add 1/2 the berries in a layer.
Add another dollop of yogurt, smoothing it out over the berries. Repeat with a layer using the remaining oranges, another tablespoon of grape nuts and the rest of the berries.
Add the rest of the yogurt and sprinkle on top with the remaining granola or cereal.
Serve immediately and enjoy.
