If you love your cheeseburgers, here's a warm, rib-sticking play on your favorite food. If you're trying to cut back on the carbs, it's the perfect substitute.
1 lb. ground beef
1/2 cup onions, chopped
3 cups beef broth
6 oz. tomato paste
1 large tomato, seeded and chopped
2 tsp parsley
1 tsp steak sauce
1 tsp garlic powder
½ tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 cup shredded low-carb cheese
2 tbsp. bacon bits
In a medium-sized pan, brown the ground beef. Drain and rinse it.
In the same pan, without cleaning out the residual fat, add the onions and
Sweat them on medium heat until they're translucent, about 4 or 5 minutes.
Add the beef and onions to a pot. Pour in the broth, paste, tomato, parsley, steak sauce, garlic powder, cumin, salt and pepper. Bring to a simmer and allow the soup to simmer for about 30 minutes to combine the flavors.
Top each serving of soup with a tablespoon of cheese and 1-2 tsp. of bacon bits.
If desired, you can add a dash of low-fat sour cream as well. If you miss your bun, serve with a slice of low-carb bread or crackers.
