Grilled Fruit Kebobs with Raspberry Vinaigrett

Looking for a sweet, tasty dessert? Perhaps you’re tired of plain old fruit? Try this easy, delicious fruit dessert variation for a special treat. You can make it in minutes, on the grill or under the broiler.

12 melon balls (watermelon, honeydew, cantaloupe or a mix)
12 grapes, peeled (red or green)
12 pineapple chunks
12 strawberries, (washed, dried, stems/core removed)
4 long wooden or metal skewers
Fat free raspberry balsamic vinaigrette salad dressing in a spritzer bottle

1. Load the fruit onto the skewers, alternating different pieces. Ideally you should put 3 pieces of each type of fruit on each skewer.
2. Fire up the grill or turn on the broiler. If grilling, you can lay the skewers down on a clean grill grate. If making them in the oven, put the fruit skewers on a tray or piece of foil.
3. Let the fruit skewers grill about 60 to 90 seconds on one side, then flip and grill 60 seconds on the other side. Don’t walk away—keep watch. You can even keep the oven door open while you do this. 4. You don’t want the fruit to brown or get too warm; you just want the very outer sugary layer to begin to caramelize.
5. Remove the skewers from the heat and spritz them with 2 or 3 squirts each of raspberry vinaigrette dressing. Serves 4.
