Diabetic Recipes: Delicious Low-Carb Vegetarian Soup

This delicious soup is perfect to warm you up on a cold winter night. It’s low carb, high fiber, low calorie and high on flavor.

Ingredients:
4 cups vegetable stock
1 cup chopped celery
1 cup onion, diced
2 cups chopped carrots
3 cups shredded cabbage
4 plum tomatoes, chopped into bite-sized pieces
2 tbsp. lemon juice
1 packet of sugar substitute (Equal, Sugar Twin, etc.)
Salt and pepper to taste

Instructions:
Add the broth to a pot and put it on medium heat. Add the celery, onion and carrots. Bring to a simmer and lit it simmer for one hour, covered.

Add the cabbage, plum tomatoes, lemon juice and sugar substitute. Cover and simmer for another hour.

Add salt and pepper to taste; serves 4.
